#0 Müsli Bowl 0:00

1/3 cup oats (33g)
a handful of dried, sweetened cranberries
1/2 chocolate oat granola (used alnatura zartbitter in this one) (~45g)
1 tbsp sunflower seeds
a small handful of walnuts
oat milk
→ serves 1

#1 Sweet Potato Tempeh Toasts 1:31

1-2 handfuls of cooked sweet potato chunks for 2 toasts (I cooked up a smaller sized sweet potato about 250; but didn't end up using all of it for the toasts)
a squeeze of lemon juice
salt, seasoning of choice to taste
toasted bread
cucumber slices
pre-marinated tempeh
vegan sriracha mayo
→ serves 1-2

#2 Almond Chocolate Yogurt Bowl 3:00

1/2 apple, cut into chunks
1 raw cocoa energy bar
plain soy yogurt – I think I had like 250g?
1 tsp ground flax seeds
a tbsp almond butter + 2 tsp melted dark chocolate

#3 Lazy Broccoli Bean Tomato Bowl 4:03

1 small head of broccoli, cut into florets
1/2 can mixed beans (120g)
1 1/3 cup pre made tomato sauce ~ 350ml
1/3 cup water (80ml)
nutritional yeast
toast

→ serves 2, just toast up more bread

#3.5 The Layered Cashew Cherry Dessert 4:43

I followed the recipe in this video: https://www.youtube.com/watch?v=w7L_ameg0gM
but eyeballed the measurements quite a bit; also I replaced the cookies with quick vegan streusel made out of:
120g flour (1 cup)
a pinch of salt
1/4 tsp cinnamon
60g vegan butter, cold, cut into cubes (2,12oz)
60g raw sugar (1/4 cup)
2-3 tbsp non dairy milk

– combine dry ingredients first
– add the vegan butter cubes
– mix in the butter with your hands until you have little shreds of butter floating through the flour mix lol
– add the non dairy milk until it turns into pastry crumbles
– lay them out on a sheet lined with parchment paper
– bake for 15-20 minutes or until golden brown (preheated oven at 200C)

#4 Chocolate Sweet Potato “Bread” 5:15

2 1/2 cups regular flour or spelt flour (200g)
2 tsp baking powder
1/3 tsp salt
1/3 cup + 1 tsp unsweetened cocoa (35g)
½ cup raw sugar (120g)
¾ cup cup sweet potato, cooked and mashed (~150g cooked)
1 tsp vanilla
1 tbsp apple cider vinegar
¼ cup vegan butter + 1 tbsp, melted (60ml +.1 tbsp)
1 cup + 2 tbsp non dairy milk (250ml + 2 tbsp)
1/2 cup chocolate chips (80g)

Bake for 45-55 min at 180C
yields enough batter for a 20cm/8 inch loaf pan

#5 Strawberry Smoothie Bowl 7:29

~ 1/2 cup frozen raspberries (~75g)
~ 1 cup frozen strawberries (~150g)
1 tsp ground pumpkin seeds (use pumpkin seed butter if you can find it)
1/4 tsp cinnamon
1 tsp ground flax seeds
a handful of cashews + 3 dates soaked in water overnight (and boiled for 20 minutes cause I felt extra)
1-2 splashes of non dairy milk
+ granola and more berries on top
→ serves 1

#6 Crispy BBQ Tofu Sandwiches 9:27

1 block of firm plain tofu, cut into 3 or 4 slices lengthwise (200g = 7oz) → if you're not the biggest fan of the plain tofu taste use a smoked or otherwise flavoured one
~1/3 cup vegan bbq sauce (80ml)
~ 1/2 cup bread crumbs (60g)
bread of choice
hummus
plain vegan yogurt or vegan cream cheese
lettuce

yields 3-4 sandwiches

#7 Chocolate Orange Pancakes + Simple Porridge 10:30

for the pancakes:
1 cup + 2 Tbsp spelt or all purpose flour (120 + 2 tbsp)
2 tsp baking powder
2-4 Tbsp raw sugar
1/2 tsp salt
2/3 cup plant milk + 2 tbsp (190ml)
2 tsp apple cider vinegar
6 Tbsp unsweetened applesauce
1-2 tsp vanilla
1/4 cup chocolate chips (40g)
1 tsp orange zest
coconut oil for the pan

serves 2-3

for the porridge:

1 cup small cut oats (90g)
1 heavy pinch of salt
1 tbsp ground flax seeds
1/2 tsp cinnamon
2 cups non dairy milk (500ml)

serves 2-3
